A Budget-Friendly Favorite: Moong Dal Khichdi
One of my personal favorites is Moong Dal Khichdi, a dish that is both gentle on your digestion and wallet. Here's a simple recipe to make this comforting meal:
Ingredients
1 cup basmati rice 1/2 cup yellow moong dal (split yellow lentils) 2 tablespoons ghee (clarified butter) or oil 1 teaspoon cumin seeds 1 small finely chopped onion 1 teaspoon grated ginger 2 cloves of garlic, minced 1 small chopped tomato 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder (adjust to taste) Salt to taste 4 cups water Chopped fresh cilantro leaves for garnishInstructions
Rinse the rice and moong dal under cold water until the water runs clear. Soak them together in water for about 30 minutes, then drain. Heat ghee or oil in a large pot or pressure cooker over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn translucent. Stir in grated ginger and minced garlic and cook for another minute until fragrant. Add chopped tomatoes, turmeric powder, red chili powder (if using), and salt. Cook for a few minutes until the tomatoes soften. Add the drained rice and lentils to the pot and mix well with the spice mixture. Pour in the water and give it a gentle stir. If using a pressure cooker, close the lid and cook on medium heat for about 2-3 whistles. If using a regular pot, cover with a lid and cook on low heat for about 30-40 minutes or until the rice and lentils are soft and fully cooked. Stir occasionally to prevent sticking. Once cooked, let the pressure release naturally if using a pressure cooker. If using a regular pot, fluff the khichdi with a fork. Garnish with chopped cilantro leaves.
